Networking and servers • Cellular internet for the Pi

I'm working on a project that requires the Pi to have independent internet access via the cellular network and I'm hoping to get some suggestions here.

You can get hats and USB dongles for this but its hard to know what really works. I'm experimenting with this Waveshare 4G hat;

It's expensive, and it is a kludge. You connect it to the Pi with a USB cable and then it acts as a glorified dongle. You get internet through the USB serial port connection that is using AT commands as the protocol, which seems very outdated. I was eventually able to get it to work with the ModemManager on the Pi, but surely there are less expensive and more modern options?

You can get trail cameras on Amazon with 4G LTE internet connectivity for under $40, how do they do it?
