Troubleshooting • Can't re-enable VNC on Trixie after Wayland -> X11 -> Wayland swap

I just did a fresh install of Trixie on an RPi400. After seeing an unsatisfactory amount of stuttering when streaming video to a TV with the default Wayland desktop, I used raspi-config to switch to X11. The stuttering was unchanged, so I switched back to Wayland. I then noticed that VNC was no longer enabled (it had been enabled on the initial Wayland configuration and I could remote via VNC).

However, I can no longer enable VNC. If I ssh in and try via raspi-config Interface options, it boots me out of the raspi-config screen back to a terminal but with no input prompt - I have to Ctrl+C to get a prompt back.

If I try to enable VNC by logging into the desktop and opening Control Centre, I can see that VNC is not enabled, but as soon as I toggle it to enabled, Control Centre freezes - the close button doesn't respond, and I can't swap to any other of the choices in Control Centre. If I kill the process and start it again, VNC is still not enabled. How can I re-enable VNC on the Pi so that I can remote in with Wayland?

I've confirmed that Wayland is active by running "echo $XDG_SESSION_TYPE" in a terminal window, give the response "wayland".
