Beginners • Raspberry Pi OS with desktop - how to make it boot to CLI?

Hello,
I have just purchased RPi 5 and I'm thinking of installing either Raspberry Pi OS with desktop 64-bit or Raspberry Pi OS Lite 64-bit.
Desktop would probably be used very rarely, if ever.
I have heard it is possible to make Raspberry Pi OS with desktop 64-bit boot to CLI by default.
How to do that?
Also, how to change it back to Desktop?
